Parmigiana Siciliana

This is the kind of dish that brings me straight back to my great-grandmother’s kitchen in Sicily. She never followed a written recipe — just good aubergines, a simple tomato sauce, plenty of basil and parmigiano cheese, all layered together with love.


Slice and salt the aubergines, then fry them until soft and golden. Make a simple tomato sauce with Garlic, olive oil and fresh basil. In a baking dish, layer the aubergines with tomato sauce, grated Parmesan, a little mozzarella and fresh basil. Repeat until everything is used, finishing with a generous sprinkle of Parmesan.

Bake at 180°C for 30–40 minutes, until bubbling and beautifully golden on top. Let it rest before serving - as my great-grandmother used to say, parmigiana is always even better when you give it a little time.
