French Savory Muffins with Comté, Tomatoes & Mixed Olives

Soft, golden and wonderfully savoury, these French-style muffins combine creamy Comté, juicy tomatoes and a delicious selection of olives. Made with Francine flour for a light and tender texture, they’re perfect for brunch, lunch or aperitif as a flavourful snack served warm.

THE INGREDIENTS:

  • Francine flour

  • Eggs

  • Emmental & Parmesan, finely grated

  • ⁠French yeast

  • ⁠Mixed olives, pitted and chopped

  • ⁠Tomatoes, diced

  • ⁠Comté, cut into small cubes


Preheat the oven and lightly grease a muffin tin or line it with muffin cases.

In a large bowl, beat the eggs until well combined. Add the Francine flour, French yeast and grated Emmental / Parmigiano, mixing until you have a smooth batter.

Gently fold in the mixed olives, diced tomatoes and Comté, making sure they are evenly distributed throughout the mixture.

Divide the batter between the muffin cases and bake until beautifully risen and golden, with a soft and cheesy centre.

Leave to cool for a few minutes before serving. Delicious warm or at room temperature, these savoury muffins make an irresistible addition to brunches, picnics and aperitif spreads.
